Clover Club

The Clover Club cocktail can be traced back to the late 1800s and the Gentleman's Club of the same name in Philadelphia's Bellevue Stratford Hotel. It is one of Philadelphia's greatest contributions to cocktail history. Like many drinks of its day, the Clover Club all but disappeared for most of the 20th century and was revived during the cocktail renaissance of the early 2000s.

Ingredients

  • 1 egg white
  • 0.75 oz Liber & Co. raspberry syrup
  • 0.75 oz lemon juice
  • 2 oz Still Austin gin
  • Handful of ice
  • DEHY Lemon - Fine Cut for garnish

Instructions

  1. Start the build in a shaker without ice.
  2. Combine egg white, Liber & Co. raspberry syrup, lemon juice, and Still Austin gin.
  3. Dry shake without ice for 30 seconds.
  4. Add in a handful of ice and shake for five more seconds.
  5. Fine strain into a chilled Micanora glass.
  6. Garnish with a skewered DEHY Lemon - Fine Cut resting on the edge.
